Pumpkins dramatically increase their social status on the produce chain once autumn arrives.  Leaves start falling and changing to shades of yellow, burnt orange, and brown . Days become shorter  with less sunlight signaling  the grand debut of the  Almighty Pumpkin ‘s entrance into the Produce Extravaganza! Unlike the summer squash and zuchhini, cherries, and lima beans that were at the forefront of the summer produce, they take back seat in the autumn, whereas the  Pumpkin reigns supreme at the Produce EXTRAVAGANZA !  To find out why the pumpkin reigns head of the Produce Extravaganza then read on …….



  • Promotes sharp eyesight through it’s nutrient dense of Beta Carotene  which converts to Vitamin A in the body.  The pumpkin has more than 200 percent of your daily dose of Vitamin A

Forget the traditional heavy pumpkin pie desserts and check out two recipes that I created which are No Bake, GF, Vegan, No refined sugars ,and you don't have to be an expert chef to make whip up!



NO BAKE PUMPKIN PIE FUDGE (GLUTEN FREE, VEGAN)

        Ingredients
  •   1 cup -8oz pumpkin puree ( I used fresh pumpkin, but canned pumpkin would be fine too)
  •  1 coconut cultured milk yogurt greek yogurt style
  • 1/2 cup coconut butter that has been soften (could use oil, just might have a slighly different texture)
  • 3-4 tablespoons maple syrup (or agave nectar, or coconut nectar)
  • One Tablespoon of Sugar Leaf (Stevia) or Xylitol
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/8 teaspoon cloves
  •  ½ Tablespoon of vanilla extract

Directions

Combine all ingredients in a bowl and mix. If you have a blender use that if no it’s super easy to blend without in a large size bowl. Once the mixture is completely smooth pour into a 6 or 9inch in pan. Set in freezer or Fridge for 3-5 hours or until firm to touch. Optional add coconut whip cream and vegan gf lilly’s chocolate chips, and place back in freezer after eating a slice or two.

 NO BAKE PUMPKIN CHOCOLATE CHIP COOKIES (GLUTEN FREE, PALEO, VEGAN)



Ingredients
  • 3/4 cup quick oats (gluten free)
  • 1/2 cup  any gluten free flour ( I used coconut)
  • 1/4 tsp sea salt
  • 1/4 cup xylitol or sugar leaf stevia (
  • 1/2 tsp cinnamon (optional: a pinch pumpkin pie spice as well)
  • 2 -3 Tablespoons or handful  of Lilly’s vegan  mini chocolate chips
  • 1/3 cup canned pumpkin pie mix
  • ¼ cup of unsweetened vanilla milk of choice, as needed
  • 1 Tablespoon coconut oil
  • 1/2 tsp pure vanilla extract

Directions
 Combine all dry ingredients and stir very well and then add liquid ingredients in one bowl and stir well including the pumpkin mix. If the dough feels a bit too dry add  half a Table Spoon of Almond Milk to moisten it up. Then form balls or flat cookies.  Then put in the fridge  for an hour to firm up more before eating.

YOGI CORNER: SURFING BEYOND THE MAT

The journey of life is a lot like the sport of surfing. From the time we are born to even our early teens, the concept of surfing through the early stages of life is pretty easy.  Our surf route in the early stages of life for most of us is planned out and protected by our families and communities, so the idea of weathering 100 percent impact of the unexpected tidal waves and storms is far and few. Therefore, most of us are able to coast pretty easily through a planned surf route and can withstand the waves of academics, health, family, social settings, while managing our mind to stay rooted to our surf board so you won’t fall or slip along the way!

In essence, the surfboard represents our core being of who we are and how we evolve. From the moment we are born and all the way up to being a teen we rely on others and learn about life through our direct interactions with our family, school, and community. As life progresses into young adulthood, we are eager and ready to ride that first big wave.  This first wave prepares us for each bigger wave that supersedes the next.

 The first wave for many including myself was a scary experience.  I can remember it quite vividly. It was August of 1999 , I left a familiar and safe environment to go into a new unchartered territory of water, Miami of Ohio.  The feeling I had that day still seems fresh in my mind.  I felt as if I was lost at sea, not knowing what I should do next, who I should talk to, how I was going to organize my school days, and yes how I would fit in all of my extra circular activities with fitness as always being my number 1!  After I had said goodbye to my dad who did such a nice job of setting me up in my dorm, my body immediately became frozen , my fear  paralyzed me so bad that I felt as if I was sinking deeper in water. It was almost as if I needed someone to throw me a buoy to save me from drowning. Shortly after feeling frozen, isolation infiltrated my mind, because my sense of fear trickled to my surfboard(core/internal being). Deep down inside I knew who I was at the core, but being in a new environment that brought new changes and unexpected struggles caused me to react and sink into a negative thought system. I knew no one, except my roommate who I spoke to briefly once on the phone prior to going up. The  dorm room felt rather cold, gloomy, and cramped, even though the girls in hall seemed friendly. The feeling of fear was at the pit of my stomach and it became so overwhelming that it resulted in my surfboard stalling in the water, and not moving forward for about a week. I was sad, anxious, and of course full of worry about stuff I had no control over and these were people and outcomes.  People in terms of being deemed “popular” and the idea of having a non-stop packed social life, while the outcome component entailed maintaining those former honor roll high school grades.

If I had pause button to dissect this past wave, and make it relatable to the journey of life for everyone who is currently reading this and  has ever experienced a wave, storm, or even standstill current, the notion of the surfboard (core) should never change. After practicing yoga over the past ten years I fully grasp this concept and try to apply it to my life when I’m dealing with change, both positive and negative.  This notion means as we age we take on different roles whether it’s a mother, entrepreneur, caretaker, husband, gaining wealth, losing money, suffering illness, going through a divorce, experiencing grief, losing love ones, achieving success, and reaching milestones, the one thing that is still the same and should be constant is our core from our early years.  Yoga has taught me over the years to go on a journey of discovering  thy self without taking into account the past, self criticism, defining roles, material wealth, career, and external beauty.   It allows one to dig and scratch beyond the surface and isolate all external factors that society stresses one must have in order to be happy. As humans for us to be in this  “Yoga Surfing Zone” 95 percent of the time we need to be aware of life’s waves, go with the flow of the wave or storm, and possibly readjust the sequence of our lives to come back to balance and internal harmony.  Next time a wave comes your way here are a few steps  to get you back surfing  smoothly on to the next wave of your life !



2) BE AWARE OF THE CHANGE
     Don’t fight the flow of the wave or change, but be present and aware and learn how to adjust the sequence of life in order to flow

3) FACE YOUR FEARS
Pushing yourself out of your comfort zone is when transformation occurs in a positive way

4) TAKE ACTION
 Redefine yourself in positive terms after accepting the change and set goals or have a plan in place to help you become balanced on your surfboard (core).

5) MEDITATION
 Both yoga and surfing require concentration and focus. It’s so important to have a calm and focused state of mind where you have no mind chatter or negative thoughts. The more you practice meditation the more you are open to allowing change into your life and the more you can allow your mind to get in sync with your breath.

FRUIT FAIRYTALES: ONCE UPON A LIME..

The business of Healthy Living is a lot like the crazy world of the paparazzi!  Instead of chasing down celebrities, food bloggers and manufacturers are chasing down the hottest foods that will create the entire buzz for 2016! Most recently, a story I had been chasing down to shed light on is the incredible story of the Lime. This is no ordinary story, rather one that can help end your summer with Zest! 


Once upon time there was powerful often-overlooked fruit called the LIME.  It was born from the beautiful Mother fruit, called Citrus Aurantifolia,  a quite shrubby citrus that had roots in Asia.  From the moment the Lime blossomed on earth and sprouted towards sunlight it became an overachiever in areas of health. These included: skincare, eye health, digestive, dietary needs of vitamin C, anti-carcinogenic, anti-biotic properties, detoxification, treatment of scurvy, piles, peptic ulcer, respiratory disorders, gout, gums,  and urinary disorders. It extends it’s natural strengths to helping others with various diseases, disorders and symptoms that treat prostate and colon cancer, cholera, arteriosclerosis, arthritis, rheumatism , diabetes, fatigue and even high fevers.

Even though the Lime had quite the record in  overachieving in areas of health,  the Lemon, it’s main rival and first cousin always superseded him.  From the time they both blossomed, fruit goers automatically gravitated towards the Lemon for health, cooking, dietary needs, skin remedies, and marketing. The Lemon was excelling beyond the farms and produce sections infiltrating all areas of society, whereas the Lime was hanging by a thread!  Friendly reminders like the short movie, “When life Gives You Lemons” to cough drop brands like Ricola using the Lemon as the primary ingredient to soothe  sore throats and a hacking cough. It was quite evident the food culture relied primarily on Lime’s rival the Lemon for holistic and nutritional benefits, often overlooking that the Lime had them too. This feeling of inadequacy made Lime feel as if he was at a crossroads in his life. This crossroad entailed one direction accepting his current state, or the second route being the path  less traveled with more risk and the possibility of setbacks. With his reputation in the marketplace on the line and his mind starting to actually buy into the craziness of all the propaganda of what health addicts were claiming of the Lemon’s almighty powers,  the Lime one summer day took matters into his own hands. Fed up with it's surplus in the stores, along with it’s dwindling reputation in comparison to the Lemon becoming known as the “hot fruit ” that could not stay in stock gave the Lime the determination to propel him  to take action in changing  the supply and demand. The Lime truly believed deep down inside he was an equal, and if not more unique than the Lemon. His conviction was so strong that the Lime decided to set a lofty goal to reverse shortages by 50% in the marketplace. The Lime, a go-getter by nature was so resolute to use his past to ignite a fire of change!  A change he hoped would end with exclamation rather than a period!

The moment he gave himself the green light to step out of his fear of possibly failing or stumbling upon the way he began daily to reach out to different agricultural and nutritional  departments with his case. Of the 150 research departments that he approached he got turned down each time, but never lost faith overtime in his own abilities even down to his last lead.  The Lime believed his own abilities were stronger than the tangy refreshing juices beyond his soul!

Then one Sunny day, the Department for Harmony of Health rang the Lime and said they believed he had a chance to verify his healing and holistic qualities.  They saw something in the Lime that no one else had seen, and because of this they began to proceed with an intense clinical process followed by tedious evaluations on the Lime. After the tests had finished, a few weeks had passed, and still no conclusions were formed. It wasn’t until a month later to be exact, a rainy  Friday morning, the Lime woke up to the flashing lights, the sound of raindrops,  and a stampeding noise from the paparazzi. Apparently his results spread like wildfire , and all of sudden his life transformed before his very own eyes. That rainy Friday morning marked history and forever changed the life of the Lime. The results had indicated the Lime’s powers were not only equivalent to the Lemon, but the Lime had one competitive advantage over the Lemon and this differentiating factor became the buzz in the community of fruits. It showed that the juice in a Lime can affect cell cycles. Specifically, it affects the decision a cell makes to divide (mitosis) or die (apoptosis). Furthermore, the juice the lime produces can boost the activity of white blood cells, thus helping  enhance the immune system( found from http://www.sunwarrior.com/news/lemons-and-limes-pucker-power/.  This startling evidence began to infiltrate the tabloids placing the Lime in Center stage from the grocery stores to  restaurants to even been deemed  the hottest garnish of the year for cocktails! A fairytale ending no one saw coming leaving an unexpected yet  refreshing twist in a Seller’s market for the Lime! 


KEY LIME PIE ENERGY BALLS (GF, NO REFINED SUGARS, VEGAN)




INGREDIENTS
9-10 MEJOOL DATES
ONE CUP OF MACADAMIA NUTS
½ CUP OF SHREEDED COCONUTS
VANILLA EXTRACT (ORGANIC OR NATURALBRAND) – ONE TEASPOON
4 LIMES – one four cup of juice for the blender
SEA SALT –NATURAL BRAND – SMALL PINCH
MONK SWEETNER OR STEVIA- TWO PACKETS

INSTRUCTIONS

1.Start by removing pits from the dates and then take those dates and soak in a cup of water for 15 minutes until the dates become very moist for the blender or food processer. (I recommend a food processer over a blender, but either is fine.)

2. If you don’t have a food processor make sure you have a nut grinder equipment to grind down the nuts so they are easy to use in your blender or food processer. Once you grind down the nuts set those aside.

3.Check to see if the dates have moistened and if they have pour in the blender or processer to blend.  Then add the grinded down macadamia and the coconuts with the vanilla extract and one four cup of freshly squeezed limejuice and blend.  If you used a blender like I did it may be harder to blend it all together,  so if that’s the case then pour in a separate bowl after blending a bit where you can stir and blend with a large spoon until the dough becomes more uniformly blended.

4. Add the salt and the two monk sweeteners while blending and squeeze the remaining juice of one lime to add more juice if it’s consistency is too dry.  You want a bit of moistness. Save one lime for garnish and add vegan chocolate chips for an extra kick! Put in the refrigerator for at least an hour and then Bon Appetite! You can store the balls up to a week , but if you want them longer than a week  store in the freezer.  

Makes 15-18 Balls

INGREDIENTS

 1 Banana
Lilly’s Dark Chocolate Chips
Coconut flakes – Edward & Son’s Organic Coconuts- handful
Coconut Whip Cream ( See Mini Strawberry Coconut Crème Cakes Recipe Post) or you can buy some at your health Food store ) So Delicious Brand


Instructions

Slice the banana so there is an even enough of slices to create a sandwich. In a separate bowl take a half cup of chips and put in either in a cooking pot for the stove or a microwave friendly bowl to melt. For microwave I recommend a minute and for the stove it should not take longer than a minute or two depending on the level of the heat.  Take out of microwave or turn off stove and let it cool for a few minutes once chocolate has melted. Spread out slices on a plate or tray and take any knife and start coating half the banana slices with the chocolate mixture and then use the dry coconut flakes to put on top, and then take the other slice that is not coated to create a mini pie (sandwich). Add coconut cream about the size of small pinky tip and one chip on top. Put in the refrigerator for a 30 minutes to an hour to cool.  Makes 7-8 mini pies.

HEALTH FORECAST: LIGHT HURRICANE OF ICE CREAMS!

In the sweets world,  the summer time forecast is always a hurricane of ice creams! Just think the moment the weather breaks into the 80’s, ice cream trucks  with Good Humor signs begin to line up city streets, while places like PinkBerry and  ice cream parlors are jam packed all summer long, at the same time grocery stores can’t keep their shelves stocked with enough ice cream!

I realized that over the past 30 years of my life, my relationship with ice cream seemed more like a phony friend!  Although it was right there whenever I needed it, made me feel good initially, and evoked all those good feelings the moment I laid eyes on it and ate it, however in reality it wasn’t adding value to my overall life or supporting me to be the best version I could be.  A true friend will always add value and compliment one’s overall being no matter where you are or what your going through in life. Similarly, as I became more in tune with my mind body connection, I found out that eating ice cream and other dairy products were not reacting well with me and ultimately bringing me down with the end result being indigestion,  bloating, breakouts, more sugar cravings, and the list goes on!   It wasn’t until I started this health journey that I decided to zero in on my mind and body connection and with that intact be more aware of how my body reacts to specific foods. Over the past year since evolving into a "cleaner eater" I have come to the realization that saturated fats like ice cream and  heavy dairy do not work well with me, and that’s why I have come up with a cleaner, no refined sugar,  and best of all dairy free version of one my favorite ice cream flavors to share with all of you- Chocolate Chip Cookie Dough Ice Cream!

SWEET CORNER: CHOCOLATE CHIP COOKIE DOUGH ICE CREAM
(GLUTEN FREE, VEGAN, DAIRY FREE , & NO SUGAR ADDED)


INGREDIENTS

 1 Banana – one half
Lilly’s Dark Chocolate Chips- One Tablespoon
1 Cultured Coconut Yogurt or Almond- 6 0z
Natural Sweetner- Monk Fruit Two Packets
Almond Butter – One packet of Justin’s – Use half or One Tablespoon

Coconut Whip Cream- Look at the past post for the recipe  or you can buy at health food market - Spoonful


Instructions

Take half the banana and cup of yogurt and pour into a blender.  Blend and add the natural sweetner and blend again. Then take out and pour in a small bowl, and take a few of chocolate chips and spread out in bowl. Then take a Tablespoon of almond butter and make little balls and spread out evenly in bowl. Then put freezer for  an hour and take out and use coconut whip cream as topping. This portion serves one person or is fit to share with another.

SWEET CORNER: MINI STRAWBERRY COCONUT CRÈME CAKES

A mouthwatering piece of cake is lot like going to heaven! For many it’s hard to only eat cake at birthday celebrations or special events. For most, including myself one piece of cake may lead to a second and sometimes a third the following day, which ultimately sabotages our waistline.  Cake is unavoidable to say the least, and is an iconic symbol of culture, events, and celebration. There is no way to duck or hide from Mr. or Ms. Cake no matter what your health plan or food goals are!  Practically at almost any celebration from birthdays to weddings, to even small gatherings, the cake today has  evolved beyond the traditional mom and pop bakeries and into a modern day hottie!  From ultra chic cup cakes to even healthy delights,   old timers like Betty CrockerDuncan Hines, and of course Crumbs are starting to get a run for their money! I’m going to let you in on a little  secret when it comes to eating for the waistline and still satisfying those cake and frosting cravings it’s all about the COCONUTS! This ingredient is taking the cake world by storm and for so many reasons! Coconuts a healthy fat, which slows down the rise of blood sugars and helps reduce hypoglycemic cravings which most traditional cakes do the opposite. Coconut also has a low GI index, which is important in keeping levels of your hunger in check, and reduces cravings for carbohydrates. As an added bonus in the sweets world, Coconuts also speed up the metabolism providing an immediate source of energy with fewer calories than other fats. Here is my recipe to satisfy the urge  when your cravings for cake and frosting take over!


PART ONE MAKE COCONUT WHIP CREAM

Ingredients
  • 1 13-ounce can coconut milk
  • 1 tablespoon of honey
  • 1 teaspoon of vanilla extract  v
  • 5 drops of vanilla stevia or any natural sweetener will do
  • optional a small pinch  of celtic sea salt

Instructions
Place the can of coconut milk in the refrigerator at least 24 hours before making the whipped cream, so it’s chilled. Place a metal bowl in the freezer for 15 minutes before making the cream. Take the coconut milk out of the refrigerator and remove the lid and gently scoop out the coconut fat, placing it in the chilled bowl. Using a hand blender , whip the coconut milk fat until light and fluffy, about 1 minute and add honey, vanilla extract, stevia, and salt. Use right away or store in a glass jar in the refrigerator for up to 24 hour.

Part 2 MINI STRAWBERRY CAKES 


 Ingredients
  • 10-12 Strawberries
  • Lilly’s Dark Chocolate Chips- 3- Teaspoons
  • Coconut Crème- One Cup of Coconut Cream



 Wash and slice the strawberries so you have an even amount to make sandwiches.  Spread out strawberries and then take spoon and scoop up the coconut whip cream from the day before  and spread mixture evenly on strawberry slices  and then put a few chips on the mixture and put another strawberry slice on top creating a sandwich. Put desired coconut cream on top of the sandwich with a chocolate chip.  Place mini cakes on tray and bon appetite!
