Lilly’s Dark Chocolate Chips
Coconut flakes – Edward & Son’s Organic Coconuts- handful
Coconut Whip Cream ( See Mini Strawberry Coconut Crème Cakes Recipe Post) or you can buy some at your health Food store ) So Delicious Brand
Instructions
Slice the banana so there is an even enough of slices to create a sandwich. In a separate bowl take a half cup of chips and put in either in a cooking pot for the stove or a microwave friendly bowl to melt. For microwave I recommend a minute and for the stove it should not take longer than a minute or two depending on the level of the heat. Take out of microwave or turn off stove and let it cool for a few minutes once chocolate has melted. Spread out slices on a plate or tray and take any knife and start coating half the banana slices with the chocolate mixture and then use the dry coconut flakes to put on top, and then take the other slice that is not coated to create a mini pie (sandwich). Add coconut cream about the size of small pinky tip and one chip on top. Put in the refrigerator for a 30 minutes to an hour to cool. Makes 7-8 mini pies.
