In the sweets world, the summer time forecast is always a hurricane of ice creams! Just think the moment the weather breaks into the 80’s, ice cream trucks with Good Humor signs begin to line up city streets, while places like PinkBerry and ice cream parlors are jam packed all summer long, at the same time grocery stores can’t keep their shelves stocked with enough ice cream!
I realized that over the past 30 years of my life, my relationship with ice cream seemed more like a phony friend! Although it was right there whenever I needed it, made me feel good initially, and evoked all those good feelings the moment I laid eyes on it and ate it, however in reality it wasn’t adding value to my overall life or supporting me to be the best version I could be. A true friend will always add value and compliment one’s overall being no matter where you are or what your going through in life. Similarly, as I became more in tune with my mind body connection, I found out that eating ice cream and other dairy products were not reacting well with me and ultimately bringing me down with the end result being indigestion, bloating, breakouts, more sugar cravings, and the list goes on! It wasn’t until I started this health journey that I decided to zero in on my mind and body connection and with that intact be more aware of how my body reacts to specific foods. Over the past year since evolving into a "cleaner eater" I have come to the realization that saturated fats like ice cream and heavy dairy do not work well with me, and that’s why I have come up with a cleaner, no refined sugar, and best of all dairy free version of one my favorite ice cream flavors to share with all of you- Chocolate Chip Cookie Dough Ice Cream!
SWEET CORNER: CHOCOLATE CHIP COOKIE DOUGH ICE CREAM
(GLUTEN FREE, VEGAN, DAIRY FREE , & NO SUGAR ADDED)
INGREDIENTS
1 Banana – one half
Lilly’s Dark Chocolate Chips- One Tablespoon
1 Cultured Coconut Yogurt or Almond- 6 0z
Natural Sweetner- Monk Fruit Two Packets
Almond Butter – One packet of Justin’s – Use half or One Tablespoon
Coconut Whip Cream- Look at the past post for the recipe or you can buy at health food market - Spoonful
Instructions
Take half the banana and cup of yogurt and pour into a blender. Blend and add the natural sweetner and blend again. Then take out and pour in a small bowl, and take a few of chocolate chips and spread out in bowl. Then take a Tablespoon of almond butter and make little balls and spread out evenly in bowl. Then put freezer for an hour and take out and use coconut whip cream as topping. This portion serves one person or is fit to share with another.
